Gigi Acker, MPH, RD, is a part time instructor at SJSU and owner of NutritionInsights, Inc. (www.nutritioninsights.com). She received her Masters degree in Public Health Nutrition from the University of Minnesota and Bachelors degree in Nutrition and Food from Auburn University. Prior to moving to Silicon Valley, Gigi taught nutrition at the College of St. Catherine, Minneapolis for 10 years. As owner of NutritionInsights, Gigi has provided fun & motivational nutrition-focused seminars to many companies including Cisco Systems, Yahoo, Electronic Arts, 3M and American Express. She has broadcast nutrition messages through television appearances and radio interviews in over 30 cities.

Current Research Interests: Utilization of underutilized plant proteins, functional properties of plant proteins, detoxification of naturally occurring plant toxicants, and nutritional aspects of food processing. Toni Bloom, MS, RD, is a part time instructor at San José State University and the owner of Toni Bloom & Associates, a nutrition counseling and consulting firm (www.tonibloom.com). Ms. Bloom received her Masters degree in nutrition from Penn State and her Bachelors degree in nutrition/pre-medicine from Ohio University. She is the elected Past Chair of the American Dietetic Association's (ADA) Nutrition Entrepreneurs practice group. Ms. Bloom's corporate client list includes Sun Microsystem and Hewlett Packard and she's a resource for Men's Health, Runner's World and NBC-TV/San Francisco.

Izzie Brown, M.S., R.D., C.S.C.S. received her MS degree in Exercise Science from Springfield College, Springfield, Massachusetts in 1992 and her BA in Philosophy with a minor in Education, Rollins College, Winter Park, Florida. She participated in the AP4 program at Immaculata Collage earning the equivalent of a BA in Nutrition, Immaculata Pennsylvania. In 1998 she was invited into Kappa Omicron Nu Honors Society. Her internship took place at the Hospital of the University of Pennsylvania. The topic of her Masters thesis was carbohydrate loading and the middle distance rowing race. Izzie has coached the Women’s Rowing Programs at Mount Holyoke College and Temple University. In 1995 she earned a silver medal at the Pan American Games in Argentina in the lightweight women’s double rowing event. Izzie Brown comes to us from Alta Bates Summit Medical Center where she was a clinical dietitian.

Kathleen Cahill has been a lecturer at San José State University since 1998. She also teaches at Evergreen Valley College. In the past she has taught at Mission College, and was a visiting professor at the University of Guam in 2002. Ms. Cahill is an alumnus of SJSU, receiving her M.S. in Nutrition Science and her B.A. in Liberal Studies with a minor in Anthropology. She did work for her graduate project at the Western Human Nutrition Research Center, USDA. From 2000 – 2002 she was the community nutrition chair of the San Jose/Peninsula District Dietetic Association. Her current interests are the interaction between diet and the environment and international nutrition.

Dr. Chou received her Ph.D. in Plant Biology, emphasis on molecular biology, from University of California, Davis. She continued her postdoctoral research in Plant Gene Expression Center of the Agricultural Research Service, U.S. Department of Agriculture, in Albany, California. Before joining San José State University, she was a staff scientist in biotechnology industry. She has been a member of the faculty in the Department of Nutrition, Food Science and Packaging since 1999.

Ms. Fee received her M.A. degree in Foods and Nutrition at San José State University and her B.A. in Education from San Francisco State University and holds 2 Teaching Credentials from the State of California. She served as Director of Nutrition Education Consultants for 7 years and has 24 years of teaching experience. She has 5 publications related to nutrition education and the older adult. Her current interests include aging and nutrition, complementary and alternative health practices, and multicultural health issues. She serves as Associate Director for Health Professions, and as a core faculty member of the Stanford Geriatric Education Center. She is also the Director of Circle of Friends, a coalition of alumni, faculty, students, community partners, and friends that provides ongoing, private funds to enrich student education and sustain the department's dedication to excellence.

Alan received his MBA in Foodservice Management with an emphasis in Public Administration at Adelphi University in Garden City, New York. After attending the Culinary Institute of American in Hyde Park, New York, he completed an apprenticeship at the Hotel Schweizerhof in Bern, Switzerland. While teaching Culinary Arts at Laney College, he produced and performed in an acclaimed TV cooking series. Mr. Finkelstein came to San José State University as Executive Chef to oversee the food operations of Spartan Shops, Inc and served in that capacity for seven years. He teaches hospitality and cooking laboratories at SJSU and supervises the student-run First Class Dining Room on campus.

Dr. Hollenbeck received his Ph.D. in Nutritional Biochemistry from Oregon State University in 1982. From 1982 until 1995, Dr. Hollenbeck held a joint appointment as a Research Scientist in the Division of Endocrinology, Metabolism and Gerontology in the Department of Medicine at Stanford University School of Medicine and the Geriatric Research, Education and Clinical Center, Veterans Administration Medical Center, Palo Alto, CA. During this time, he served as Coordinator of Diabetes Research and Associate Director of the General Clinical Research Center at Stanford University. Dr. Hollenbeck has authored over 85 scientific publications and has served on the Editorial Board of American Journal of Clinical Nutrition. He is a member of several professional societies and, has held numerous positions in the American Diabetes Association including the National Chair of the Council on Nutritional Sciences and Metabolism. He has been a member of the faculty in the Department of Nutrition, Food Science, and Packaging since 1995, and he is now appointed Professor.

Karen Knoblaugh, MS, RD, received her Master’s in Nutrition from San Jose State University and is a part-time lecturer in the Nutrition dept. Her area of specialty is food allergies and gluten-free diets. Additionally, she is a Clinical Dietitian at O’Connor Hospital and is the President of the San Jose Peninsula Dietetic Association. In her free time, she is working on starting her own small business. Karen enjoys fine dining, wine tasting, traveling, her Wii, and playing the drums.

Richard Larson has been teaching classes at SJSU since 1995. Prior to his work as a lecturer in the Nutrition, Food Science, & Packaging and Hospitality Management Departments, Richard worked in a wide range of positions in the Hospitality Industry. After years of working in fine dining, conference centers, and corporate foodservice facilities, Larson owned and operated his own off-premise catering company based in Santa Cruz, California. Richard has been certifying fooodservice managers in ServSafe®, Food Safety Training for over 15 years. He has successfully trained thousands of industry professionals, having taught classes for the Culinary Institute of America at Greystone, the California Restaurant Association, California Culinary Academy, Disneyland, and numerous other companies. He has earned the prestigious Foodservice Management Professional (FMP) designation from the National Restaurant Association. Richard is a former president of the Scotts Valley Chamber of Commerce, former chair of the Hospitality Management Advisory Board at SJSU, and has served on numerous boards and committees throughout Santa Cruz and the Bay Area. He has also been an instructor with the Motorcycle Safety Foundation. When Richard is not working he enjoys endurance sports and has completed six marathons and a number of triathlons. He and his wife Laura have been married 33 years and have three children ages 29, 27 and 21.

Dr. Lu received her Ph.D. in Nutrition with a minor in Biochemistry from University of California, Berkeley, and has a B.S. in Agricultural Chemistry. She has published 32 articles in nutrition and food science. She has successfully developed a chemically defined medium for cultivating 'Caenorhabditis elegans'. Her current research interest is in using the nematode as a model for nutrition and food science studies such as nutrient requirements, growth factors, nutrient metabolism, nutrient interrelationships, and food additives.

Eileen MacKusick, MS received her MS degree in Nutrition Education from San José State University in 1994 with an MS project working with the Cutting Edge Consulting firm testing the effectiveness of educational materials for HIV/AIDS patients. She received her BS degree at San José State University in 1991 with a concentration in Clinical Dietetics. She completed her Master Practicum at Palo Alto Veterans Administration Hospital. Currently Eileen MacKusick is the Head Clinical Dietitian at Watsonville Community Hospital and comes in to teach the Advanced Medical Nutrition Therapy course each Fall semester at SJSU. Lecturer.

Dr. McProud received her Ph.D. in Food Science, with an emphasis in Food Administration and a Minor in Business Management at the University of Wisconsin, Madison. She has done research related to energy use and management in the foodservice industry and has also obtained several nutrition, education, and training grants related to school foodservice and child nutrition programs. Before coming to SJSU, Dr. McProud worked as a registered dietitian at Kaiser Foundation Hospital in Fontana, CA. She has twenty-eight publications. She received the Excellence in Education Award from the California Dietetic Association in 1994.

Dr. Morrill received her Ph.D. in Nutrition with a minor in Biochemistry from the University of California at Berkeley and has worked in several research labs, including those of the National Institutes of Health and the Experimental Nutritional Division of the Agricultural Research Center. She has a special interest in teaching science to nonscientists, and has written three books: Science, Physiology, and Nutrition for the Nonscientist; Realities of Nutrition; and Are You Eating right? - Analyze your diet using the nutrient content of more than 5000 foods.

Dr. Saltmarch-Perry received her Ph.D. in Food Science at the University of Minnesota, and her B.S. in Food Science and Nutrition at the University of Washington. She was assistant professor at Virginia Polytechnic Institute and State University and was Senior Biochemist at Del Monte Corporation in Walnut Creek, CA. Dr. Saltmarch-Perry has co-authored four chapters in books, 24 articles, and several pamphlets regarding food science and nutrition.

Sandy Queen has been the Coordinator for the Cal-Pro-NET Center at San José State University since January, 2001. She received her BA degree in Home Economics from the University of California, Santa Barbara and her MS in Nutritional Science from San José State University. Her early experiences included a position with the Los Angeles Department of Water and Power as a Home Economist, followed by completion of a Secondary Teaching Credential in Home Economics/Anthropology and part-time consulting for Thermador-Waste King. She enjoyed several years as a Medical Sales Representative and then returned to school to pursue her interest in nutrition science. Working as a graduate student assistant for the Cal-Pro-Net Center and as a Food Services Administrator for the San Jose Unified School District has prepared her to assume the position as Coordinator of the Cal-Pro-Net Center. She thoroughly enjoys being on the San José State University campus and working with the outstanding professionals in the field of child nutrition. She is currently active in the Northern California School Nutrition Association.

Mr. Schueneman received a bachelor of science degree from Michigan State University School of Packaging (1969) and an MBA degree in marketing from Northern Illinois University (1976). He has previously worked for the Western Electric Company as a packaging engineer (1970-1977), the Clorox Company as a Unit Manager in package development (1977-1980), and Lansmont Corporation as marketing manager (1980-1983). He is currently president of Westpak, Inc., in San Jose, California, a company which he co-founded in 1986. Mr. Schueneman has also been associated with San José State University as an instructor in the package program (1985-1988) and more recently as the Packaging Program Director (2002-present). At Westpak, Inc., Mr. Schueneman directs the package engineering, design, and product testing functions of this young and growing company. Westpak tests packages for a wide variety of products from a world-wide list of customers. They also provide product environmental testing including shock, vibration, temperature, humidity, altitude, and other environmental inputs. At San José State University, Mr. Schueneman teaches an average of four classes per year on subjects including Protective Packaging Dynamics, Packaging Machinery and Systems, Distribution Logistics, and Introduction To Packaging. As Program Director, he is also responsible for the recruitment of students into the program, academic program enhancement, interaction with industry groups, and scholarship programs. Mr. Schueneman is a Fellow of the Institute of Packaging Professionals and holds professional certification in Packaging and Material Handling (1974). He is a member of the Institute of Environmental Sciences and Technology (IEST) and has published numerous articles dealing with product and package testing, cushion material evaluation, and techniques to optimize the package engineering function.

Dr. Sucher received her Sc.D. from Boston University Medical Center in Nutritional Science. She has held several positions in industry before coming to San José State University. She is a recognized authority on how diet, health, and disease are affected by culture/ethnicity and religion. Dr. Sucher has published newsletters, numerous articles, and textbooks on this subject. Her latest textbook is Food and Culture, 4th edition (2004), published by Wadsworth. Other research interests include medical nutrition therapy.

Ashwini R. Wagle, MS, RD is currently an Assistant Professor in the Department of Nutrition, Food Science, and Packaging at San José State University. She teaches a wide array of classes such as Food and Culture, Science and Hunger, Food Service Systems Management, Colloquium in Nutrition and Food Science and is also the Dietetic Internship Coordinator for the program. She received her MS degree in Food and Nutrition from Indiana University of Pennsylvania (IUP). A Registered Dietitian by profession, Ashwini has worked in several skilled nursing facilities and acute care hospitals in the Bay area for the last 13 years. Ashwini Wagle is also involved with several on-campus and off-campus organizations such as the South Asian Heart Center, San Jose Peninsula District of California Dietetic Association, Cal-Pro Net Center and Shaping Health as Partners in Education Committee (SHAPE) for the San Jose Unified School District.

Fritz Yambrach, Ph.D. is an Associate Professor of Packaging in the Department of Nutrition, Food Science, and Packaging. Dr. Yambrach completed his PhD at University of Buffalo SUNY, an MBA at Utah State University and a BS in Packaging Engineering at Michigan State University and another BS in Marketing at Utah State University. Before coming to SJSU he taught at the Rochester Institute of Technology (RIT) in Rochester, New York in the Department of Packaging Science as a Tenured Full Professor. In addition, Dr. Yambrach served as Associate Director of the Integrated Plastics Center at RIT (2004-2005). Dr. Yambrach's area of focus relates to pharmaceutical and medical product package design. He has served as a consultant to 20 major companies including Johnson and Johsnon, Amgen, and Bausch and Lomb, as well as Campbell's and Kraft Foods.
